Ok, firstly, I added salt. Some to the veg mixture and some to the eggs. Not a lot, but enough for some flavour. I added fresh jalapeños to the veg, because I had them. And I cooked the eggs in butter, because why wouldn't I? Oh and sour cream rather than yogurt.
These were nice, but still needed a hefty dose of Chipotle sauce to add some more flavour. Not a go to, but not a failure either.
