I will definitely make this again - easy, healthy and yummy, it hits all my requirements for a week-night dinner.
Here are my modifications after reading the reviews.
Cooked 1 cup of whole wheat orzo (whole wheat was the only organic non-GMO option) in well salted water, tossed in the box of spinach then drained. At the same time I sauted 1/2 chopped onion and several cloves of garlic then added the pork that was cut in cubes and well seasoned with salt and pepper, added 1 tbs of Italian seasoning - cooked that another minute or two and added the tomatoes. After that had "made friends" I added the orzo and spinach. Plated it and added a good handful of crumbled feta to the top. Honestly - it was good. I loved the flavor of the pork, the warm tomatoes, the nutty whole wheat orzo and the salty pops of feta. This would be even better with a good handful of chopped fresh basil on the top....but we didn't have it tonight.....
