a tip to guarantee soft beef even when browned all the way is after slicing it against the grain for tenderness, put it in a ziploc with 1/4 teaspoon or so of baking soda. squish the bag so it covers all the meat, then just let it sit for 10-15 mins. it never fails me ! beef is tender every time
