Lentils you could serve at a dinner party? Yes! Loved this recipe. It's very adaptable; I was feeding someone who didnt like kale so replaced that with seasonal mushrooms. I also added shallots that needed used up, and caraway seeds just for fun. At the very end, I threw in a generous amount of both chopped curly parsley and chives.
If you aren't too bothered about toasting the almonds properly, this can easily be a one pan meal. I used cooked lentils to save myself some time and energy. If cooking from scratch, do take the recipes advice and cook in salted water, maybe even veg broth.
A great, healthy, tasty dish that's both gluten free and vegetarian. Easily veganised by replacing the feta with firm tofu (I like Tofoo)
