Delicious!
We made a few tweaks to the recipe and left out the kale:
Used wholewheat noodles instead of rice noodles for a healthier twist - rice noodles will probably go better with this recipe but it was still enjoyable.
Added chicken - coated chicken in flour and fried in a tablespoon of vegetable oil as step 1. Cooked everything else according to the recipe and added the chicken back in with the sauce and noodles - gave it all a good stir and heated back up together. We would add chicken again next time.
Added 1 teaspoon of chilli paste rather than 1 tablespoon as we were eating with our 3yr old son.
Overall a very tasty, filling meal. Enjoyed by the whole family!
The sweet potatoes were perfect - a sweet and spicy sensation. We will be making these as an addition to other meals in the future!
