Tweaks/mistakes:
1. Used 3 small zucchini.
2. A full can (14.5oz) of diced tomato, WITH liquid.
3. A full can (13.6oz) of full fat coconut milk
4. Strain the zuchini and tomato and discard liquid before blending
5. Add 2 tbsp of pasta water into blender
With the above modifications, this makes enough sauce for 2 lbs of dry pasta. (Two adults ate one pound of pasta with half the sauce. Rest is in the fridge for use later!)
