Very yummy. Quick to make, easy clean-up if you line your pans with foil like I do. Made all 4 potatoes and saved 2 for later, as well as the hummus sauce; which both came back well a few days later. For leftovers I made a fresh can of chickpeas and made a fresh "tomato Salad" for topping. Instead of chili garlic sauce, I just used a garlic hummus for the hummus sauce. For the spicy kick I added jalepeno to the tomato salad as well as a splash of evoo.
I will take the suggestion of other commenters and serve with an arugula salad or spring mix on the side next time I make this.
