Made for parents as I'm not personally a fan of mushroom risotto. It was super easy to cook, and went down great! I couldn't find dried mushrooms so used 100g of normal white button mushrooms and this seemed to work well, so not sure how much of a different the dried ones would have made.

porcini mushrooms would give a much stronger mushroom taste to the rice
