I made this last night. I used 3 yellow squash and 3 pint jars of home canned tomatoes since that is what I had on hand. I let the squash get some color before adding in the drained tomatoes and some basil and letting it all cook for a bit. I added the coconut milk and then used my stick blender to blend it (turn the heat down first). I added some extra garlic powder and a bit of salt and it was great. My squash hating son loved it lol Definitely could use some other flavor help but it was good enough to make again.
