Ok so we ended up making the recipe a completely different way than what we posted earlier and it turned out so good!! The kiddo had the idea of making it like we make our Takikomi Gohan and it worked perfectly in our 6qt Instant Pot. We put it in to the pot in layers as follows: 1. 3 cups of brown rice - rinsed 2. All the called for seasonings along with the garlic 3. 2 small chopped white onions 4. About 15 or so chopped baby bella mushrooms 5. 2 medium diced zucchini 6. 2 cans of diced tomatoes 7. 4 cups of homemade vegetable broth Only things we didn't add were the beans and the olives. (Goes without saying we didn't use the oil but anyways.. ) Then we just hit the rice setting and let it do its thing. We used natural release ( it was about 30 mins after it stopped cooking when I got back in there to check it ) and it was perfect! We added 2 cans of kidney beans and a few green olives and popped the lid back on till dinner time leaving the keep warm setting going ( its below zero here so I wanted it to be piping hot when the Hubs gets home ). It was really hard not to just sit and eat it with a fork out of the pot hahahaha. Our version is not as "dry" looking as the original but I knew it would have a lot more liquid's when it was done because of all the veggies. I am ok with that because it makes the leftovers better. Anyways it worked! Kind of tickled with or little Instant Pot Food Adventure this evening.
