With no added sugar, these high protein pancakes produce a level glucose response due to their perfect ratio of fat, fiber and protein, making them blood sugar friendly. These easy, one bowl banana pancakes have quickly become a family favorite at our house and make the perfect high protein breakfast or after school snack for my growing teenage son. This recipe makes 28-32 silver dollar pancakes. I figured one serving is 7-8 pancakes.
