Greek Salmon Orzo

Ingredients
3 servings
1 lbSalmon
or one 4-6 oz filet per person
2 Tbspextra virgin olive oil
1 Tbsplemon juice
freshly squeezed
¾ tspdried oregano
½ tspdried dill
½ tspgarlic powder
½ tspsalt
more to taste
¼ tspBlack Pepper
more to taste
2 tspOil
I used oil from the jar of sun-dried tomatoes but can also use extra virgin olive oil
1shallot
minced
4cloves garlic
minced
1 cupOrzo
uncooked
⅓ cupsun-dried tomatoes
2 cupsChicken Broth
can also use veggie broth, add more as neeeded
½ tspdried oregano
½ tspdried basil
¼ tspdried dill
¼ tspdried parsley
salt
to taste
pepper
to taste
1Lemon
juice and zest, more to serve
¼ cupKalamata Olives
sliced in half
½ cupFresh Parsley
roughly chopped
¼ cupfresh mint
roughly chopped
¼ cupFeta
more to serve
Instructions
Salmon
Step 1
In a small bowl, mix together all salmon ingredients. Brush onto the salmon filets.
Step 2
Cook the salmon in a pan over medium heat for about 4 minutes a side or until an internal temperature of about 130 degrees F. I chose to air fry my salmon at 375 degrees for about 8 minutes. If you air fry or bake your salmon, you can start making your orzo at the same time. If you use a regular conventional oven, bake your salmon at 400 degrees for 10-15 minutes or until an internal temperature of about 130 degrees F.

Step 3
Heat the oil in a large high-rimmed pan over medium heat. Add the shallot and garlic. Cook for 2 minutes, stirring often. Then add the uncooked orzo and sun-dried tomatoes. Stir to combine and let the orzo toast for 2 minutes.
Step 4
Pour in the chicken broth and season with the dried oregano, dried basil, dried dill, dried parsley, and salt and pepper to taste. Bring to a boil then lower the heat to simmer. Cook, stirring occasionally to prevent the orzo from sticking. It will take about 15 minutes for the orzo to cook. Add additional chicken broth if it absorbs before the orzo is cooked.
Step 5
Once the orzo is cooked, add the lemon zest, lemon juice, olives, fresh parsley, and fresh mint. Stir until well combined. Add the feta and stir to combine.
Step 6
Serve immediately with the orzo on the bottom and a salmon filet on top. Serve with additional lemon juice, feta, fresh herbs, and salt and pepper as desired.
