Ingredients

2 x 15 ounceSweet corn
cans, drained - or 4 ears fresh corn, husked
2 tablespoonsExtra virgin olive oil
or melted butter
3 tablespoonsAvocado mayo
or mayo of choice
1garlic clove
minced
1lime
juice
⅓ cupscallions
chopped, optional
½ cupfeta cheese crumbled
¼ teaspoonchili powder
¼ cupCilantro
finely chopped
¼ teaspoonsmoked paprika
1jalapeño pepper
diced
salt
to taste
Instructions
Step 1
Heat a medium skillet then lower to medium heat. Add olive oil or butter.
Step 2
Pour in the drained corn or husked corn and sauté for 5-7 minutes or until golden and slightly toasted.
Step 3
Set the corn aside to cool.
Step 4
In a medium bowl combine the mayonnaise, minced garlic, juice of one lime (you can substitute with lemon), feta cheese, chopped cilantro, smoked paprika and diced jalapeño.
Step 5
Pour in the cooled corn and mix until well combined. Serve as a side dish, with chips, taco topping, salad topper, Burrito bowl, with bbq salmon and so many other ways.
