Pepperoni and Mushroom Calzone

Ingredients

1.5 CWhole Milk Ricotta Cheese
0.5 CParmesan
Grated
½ tspsalt
½ tspblack pepper
¼ tspRed Pepper Flakes
Add more or less depending on spice preference
¼ tspdried oregano
0.25 CFresh Basil
Chopped
16 ozPizza Dough
Fresh, I used, plain or garlic & herb
1 CPizza Sauce
Marinara Sauce, Use about 1/2-3/4 in calzones, and remaining to serve
4 ozFresh Mozzarella
Sliced
3 ozPepperoni
Add as many or few as you like
4 ozMushrooms
Cooked, Sliced, I used baby bella and heated them in a pan with a little oil ahead of time
2 tspolive oil
1 TBFlour
Or as needed to stretch out dough on surface
Instructions
Step 1
Preheat oven to 500 degrees. In a large bowl combine ricotta, grated parmesan, salt, black pepper, red pepper flakes, dried oregano, and fresh basil.
Step 2
Flour a work surface. Separate the pizza dough into two 8 oz pieces and and roll each piece into 12 inch circles.
Step 3
Spread about 1/4 cup of pizza sauce onto one half of each circle, leaving a little room around the edges.
Step 4
Top each circle with the ricotta mixture, fresh mozzarella, pepperoni, and mushrooms or toppings of your choice.
Step 5
Fold over the half of dough without filling and crimp the edges shut with a fork.
Step 6
Transfer calzones to a baking sheet. Brush the top of the calzones with olive oil and bake at 500 degrees for 10-15 minutes or until golden
