Garlicky Parmesan Zucchini Bake

This was very tasty., I used 2 zucchini rather than 4- the casserole was plenty full. My husband had second and he’s not a zucchini fan. Will make again!

This was a great side to go with my jalapeno popper stuffed chicken.

This was so delicious! I doubled the garlic which was a really good call bc the original amount would not have been enough. To make it vegetarian, I substituted mozzarella cheese for the parmesan. I used one ball of mozzarella but could definitely use more to make it cheesier.
