Step 1
Preheat the oven at 375F and grease a 9x13 baking sheet with cooking oil spray.
Step 2
Cream the coconut oil or butter and brown sugar with a whisk for about 1 minute.
Step 3
Add the flour, baking soda, and salt. Mix with a spatula.
Step 4
Add the oats and mix well. It will be a crumbly mixture but it will press together.
Step 5
Sprinkle half the dough into the prepared baking pan.
Step 6
Press down with your fingers or spatula to an even layer all across the pan bottom.
Step 7
Spray hands with cooking oil spray. Now take the date mixture and mold it flat to form patches.
Step 8
Gently press out the filling for a solid layer across the complete bottom of the crust.
Step 9
Sprinkle the rest of the dough over the filling layer, and press down using a spatula. Bake for 25-30minutes. Allow cooling for 20 -30 minutes before cutting.
