Instructions
Step 1
In small pot simmer water and add vinegar.
Step 2
Swirl water and drop egg one at a time.
Step 3
Simmer for 2-3 minutes.
Step 4
Scoop poached egg out, dry with napkin and repeat with second egg.
Step 5
While eggs are poaching, In small pan heat oil to medium heat and cook spinach for 2 minutes.
Step 6
Peel and halve avocado.
Step 7
Plate cooked spinach, avocado and poached egg.
Step 8
Season with everything bagel seasoning, salt, pepper and paprika.
