Ultimately a great and simple base recipe that with a few small tweaks can really be elevated to phenomenal. If you just want a simple dish I'd highly recommend. however, with a tiny bit more thought this dish can go beyond it's rough framework to something truly excellent and I'll list my thoughts below. To begin, prep is not actually 10 minutes. It's realistically 20 for chopping 2lbs of veggies and you also need to have the chicken "marinade" for 30 or so minutes before putting them in the oven. Just begin marinading the chicken first, then chop veggies. By the time the chicken is ready to go in it'll be roughly that long anyways. I also used 2 baking trays as otherwise your food will get very crowded and will steam rather than crisp and brown. I added the potatoes first before the chicken as thin slice chicken cooks quickly (15 minutes depending) and I wanted crispy potatoes. I suggest adding rosemary for the potatoes and sage for the chicken as those two are like peanut butter and jelly and work great in this dish. This dish is very rich due to the butter sauce and cheese. I highly recommend adding the lemon wedges on top when serving to squeeze over the top of the veggies and chicken. This will really help cut through the heaviness and lighten up the flavor and add complexity. I definitely think you could half the butter as well if you want it to be a bit more healthy. Overall a great dish that with small easy changes can avoid some cooking sins and also be tweaked to the cookers preference :)
