Instructions
Step 1
In a medium bowl, whisk together the eggs, agave, and melted coconut oil.
Step 2
Add the almond flour, ground chia seeds, baking powder, and instant coffee.
Step 3
Whisk everything together and set in the fridge for about 10 minutes while your waffle iron heats up.
Step 4
Brush the inside of your waffle iron with melted coconut oil.
Step 5
Place 1/4 – 1/3 cup of the batter onto the center of your waffle iron.
Step 6
Close the iron and cook until your waffle iron light turns off. Gently remove from the iron with a fork.
Step 7
Repeat the process of greasing the waffle iron and cooking until all the batter is used. It should yield 3 – 4 waffles. If you use 1/4 cup batter per waffle, you’ll make 4 waffles.
Step 8
Top with your favorite nut or seed butter (I used sunbutter) and fresh berries!
