Ingredients

½ cupextra virgin olive oil
½ cuprice wine vinegar
1lemon juice

2 tspminced garlic
2 tspdried oregano
½ tspdried thyme
½ tspdried rosemary
¼ tspsalt

¼ tspblack pepper
1 Tbspavocado mayonnaise
or mayo of choice
8.8 ozpasta
2celery stalks
cubed
½ cuppitted black olives
sliced
1tomato
medium, cubed
1can corn
drained
1can chickpeas
drained
3radishes
sliced
½ cuppurple cabbage
medium chopped
1cucumber
medium, cubed
0.5green pepper
cubed
0.5red pepper
cubed
0.5yellow pepper
or orange, cubed
Feta Cheese
to garnish
Instructions
Step 1
Boil the pasta according to package directions, strain in a colander, then add to a salad bowl.
Step 2
Add the celery, olives, tomatoes, corn, chickpeas, radish, purple cabbage, cucumbers, and feta cheese to your salad, and mix.
Step 3
Prepare the salad dressing by whisking all of the dressing ingredients in a bowl. Place the dressing in the fridge to chill or use right away.
Step 4
Drizzle the dressing over the salad, mix, and enjoy!
