Fried Squid with Sweet Soy Sauce

Ingredients Ingredients for 2-3 persons: 500 gr/1 lb 2 oz squid, cleaned, slice into 2 cm length 5 shalllots, finely sliced 2 cloves garlic, finely chopped 2 cm Ginger, peeled and finely chopped 1 large red chilli, finely sliced juice of 1/2 lime or lemon 2 kaffir lime leaves, finely sliced 3 tsp indonesian sweet soya sauce / kecap manis 1 tsp oyster sauce pepper ( to taste) 50 ml/2 fl.oz vegetable oil To marinate: 1 clove garlic or 1/2 tsp garlic powder 1 cm ground turmeric or 1/2 tsp turmeric powder juice of 1/2 lime or lemon 1 tsp salt Step-by-Step Instructions: 1 Grind the ingredients for the marinade in a mortar into a smooth paste. 2 Or just mix the ingredients for the marinade together if you use powder ones. 3 Rub around the squid with marinating paste, put aside for 15 minutes. 4 Heat 50 ml oil in a frying pan, fry the squid until golden brown. Set aside to drain. 5 Heat 2 tbsp oil in another pan, stir fry the shallots, garlic, chilli and ginger. Stirring all the time until fragrant. 6 Add kecap manis, oyster sauce and kaffir lime leaves. Add pepper to taste. Stir to mix. 7 Then add the squid and continue to stirr and mix for a while until the spice is absorbed. 8 Turn off the heat, add the lime juice. Stir to mix. Serve hot with rice.
