Kheer is a popular Dessert in India and it's known as payasam in South, especially in Kerala. And we mallus often cook this quick dessert . In Sago Almond Kheer Easy Dessert Recipe the flavoring ingredient used is powdered cardamom, but you may substitute with saffron or vanilla extract in very less quantity. Sago is a starch extracted from the spongy centre, or pith, of various tropical palm stems . It is a major staple food for the lowland peoples of New Guinea and the Moluccas, where it is called saksak, rabia and sagu. In today's recipe with sago , it's soaked in hot water for 20 minutes and then drained and washed with cold water. Washing in cold running water will avoid sticking of sago seeds together. then its cooked with milk and sliced blanched almonds. You may either buy sliced almonds from stores or blanch your whole skinned almonds. Blanching means soaking almonds in hot water, and then peeling the skin before it cools down. Add condensed milk and flavoring ingredient cardamom when sago seeds get cooked well and milk get reduced to two third .
