I used red onion for color and to enhance the flavor profile. I cut the chicken into bite sized pieces and I made my own taco seasoning:
Adobe chili powder, garlic powder, Adobe, chili seasoning, cumin, and a touch of paprika. SO GOOD. I topped with a garlic aioli and fresh Cilantro. Wish my avocados were ripe. But well catch them on the next go around.
