Step 1
In small mixing bowl whisk together 1½ tbsp. olive oil and 1½ tbsp. balsamic vinegar. Brush mixture on two slices of bread. On one slice of bread dd sliced tomato, mozzarella and fresh basil. Brush with more olive oil and balsamic and sprinkle with salt and pepper. Top with second slice of bread. Brush olive oil in a non-stick pan and heat to medium low, add sandwich and cook on both sides for 2 minutes. Repeat with remaining bread.
