Instructions

Step 1
First up, marinate your chicken thighs in your "chicken marinade" ingredients. Set aside for 20 minutes.
Step 2
Meanwhile, slice up your potatoes into 1cm thick wedges and toss in your olive oil, salt, and pepper.
Step 3
Pour the chips into one of the compartments in your Ninja Foodi Air Fryer.
Step 4
Transfer the chicken pieces onto your two skewers and place into the other Ninja Foodi Air Fryer compartment.
Step 5
Set the Ninja Foodi Air Fryer at 200C/390F for 16 minutes and press MATCH so both the chicken and the chips finish cooking at the same time. Make sure to turn them over halfway through. You'll end up with crispy chicken and beautifully cooked homemade chips.
Step 6
Gently slice the chicken off the skewers to give you small chunky pieces of chicken, ready to assemble for your gyros.
Step 7
Meanwhile, put together all of your tzatziki ingredients in a bowl. Make sure to squeeze the cucumber to drain out any excess water! Taste and season based your preference.
Step 8
Chop up and prep your red onion, tomato, and parsley.
Step 9
Heat up or lightly toast your flatbread, and then layer it with tzatziki, chicken, French fries, tomatoes, red onion, parsley, and more tzatziki. Roll up your gyros (I used some baking paper to help hold it all in place) and then serve up and enjoy!
