Pepperoni Vodka Sauce Sliders

Ingredients

1 Tbspextra virgin olive oil
1shallot
minced
3cloves garlic
minced
1 tspRed Pepper Flakes
use less or omit for a less spicy version
3 Tbsptomato paste
⅛ cupVodka
⅓ cupheavy cream
salt
to taste
pepper
to taste
½ cupParmesan Cheese
freshly grated, divided
1 packageHawaiian Sweet Rolls
Hawaiian, Original
9 slicesMozzarella Log
Fresh, I bought the pre-sliced version and used enough to cover the sliders completely
½ tspdried oregano
½ tspdried basil
4 ozPepperoni
use more or less, enough to cover
3 Tbspbutter
melted
½ tspgarlic powder
½ tspitalian seasoning
⅛ cupFresh Parsley
chopped
Instructions
Vodka Sauce
Step 1
Heat olive oil in a pan over medium heat. Add shallots and garlic and cook for about 3 minutes, stirring often. Add red pepper flakes and continue to stir often for another 2 minutes.
Step 2
Mix in tomato paste and cook for 5 minutes until dark red. Pour in vodka and stir often until the liquid is mostly cooked off, about 2 minutes.
Step 3
Turn heat to low and pour in heavy cream. Stir to combine. Season to taste with salt and pepper. Add about half of the freshly grated parmesan cheese. Stir to combine until melted.
Slider Instructions
Step 4
In a baking dish, lay down the bottom half of the rolls. Spoon sauce onto the rolls and spread evenly. Top with slices of mozzarella cheese. Sprinkle on oregano and basil. Lay on slices of pepperoni. Sprinkle with a few tablespoons of parmesan cheese. Place the other half of the rolls on top.
Step 5
Melt butter and add garlic powder, Italian seasoning, and fresh parsley. Stir to combine. Brush the butter mixture on top of the buns. Sprinkle the remaining parmesan cheese on top.
Step 6
Bake for about 15-20 minutes at 350 degrees until the sliders are warm and the cheese is melted. Serve immediately.
