Step 1
Heat a large skillet over medium heat. Add the oil and swirl to coat the bottom of the pan. Sprinkle the baking soda in the pan and add the ground beef over it. Press down into a flat layer, covering the bottom of the skillet.
Step 2
Cook, undisturbed, until the bottom becomes deeply browned, about 4-5 minutes. Use a wire or meat masher to break up the meat uniformly and continue to cook and stir until no longer pink. Drain grease, if necessary.
Step 3
Add the taco seasoning and tomato sauce (or alternative suggested liquids below). Bring to a simmer and cook, uncovered, about 3-5 minutes to reduce slightly. Serve immediately with taco fixings.
