Step 1
Start by roughly chopping the onion, mushrooms, garlic, and walnuts. Also, chop the fresh coriander and slice the avocado.
Step 2
Heat up a pan on medium heat, add the oil and onion, and cook for about 5 minutes until the onion becomes translucent.
Step 3
Add the garlic, mushroom, and taco seasoning to the pan, and cook for another 2 minutes.
Step 4
Add the tomato paste, walnuts, and lentils to the pan. Reduce the heat to low and let it simmer for about 5 minutes.
Step 5
Assemble your tacos in the following order: tortilla, queso cashew, lentil/mushroom mix, red cabbage, avocado, jalapenos, and coriander.
