I added a sweet potato to make it more filling and I threw in some chili powder for extra flavor. The tomatoes are really the star of the dish 🤤

Made and is great as is. Didn’t need any yogurt or sour cream as the avocado creaminess is perfect. Definitely could add some shredded or rotisserie chicken if you wanted! Definitely will make again.
