Instant Pot Rotisserie Chicken

Great easy and fast recipe for school night. The sauce is a little thin but the flavor is just right when you are generous with the seasoning.

We love this recipe! It's so easy and way faster than oven roasting. I can get a better rotisserie than the store bought ones and know what's going into it. Most of the time I shred it and use it for soup, salad topping, casseroles, etc. One thing to note, I have to put it in breast side down for the pressure cooking portion or sometimes the breasts are still pink in the middle.

Great recipe! The chicken fell off the bone, was pretty moist and was quicker than traditional roast chicken (done in 1 hr 10 minutes). I would highly recommend this to anyone cutting down their energy bills by using the oven less. Two things of note: 1) I got a char, but I didn't achieve a crispy rotisserie skin. 2) it can be challenging to manoeuvre the chicken in the pot, so make sure you have some muscles.

Unless you brown the chicken before pressure cooking, it won’t look like the photo, but otherwise, this is a fantastic recipe. Times were just right (I usually cook at least a 5# bird).
