Instructions

Making the Dough

Step 1
Process flour, yeast, and salt in a food processor until combined. Slowly add oil, then water, and process until dough forms a sticky ball that clears sides of the bowl. (Add extra flour by the tbsp until it clears the sides.)
Step 2
Transfer dough to a lightly floured counter and shape into a tight ball. Place into a large oiled bowl and cover tightly. Let rise at room temperature until doubled in size, 1-1.5 hours.

Making the Pizza

Step 3
Adjust oven rack to upper-middle position and heat to 500 degrees. Grease a 12-inch oven-safe skillet with 2 tbsp oil.
Step 4
Cook 2 slices bacon, over medium heat until crispy, 5-7 minutes. Transfer bacon to a paper towel-lined plate. Mix 1/2 c ricotta, scallion, salt, and pepper together in a bowl.
Step 5
Pulse tomatoes, garlic, oil, and salt in a food processor until coarse, 12 pulses. Transfer to measuring cup and add reserved juices until sauce measures 1/2 cup.
Step 6
Place dough on a floured counter. Press and roll the dough into an 11-inch round. Transfer to prepared skillet; reshape as needed. Spread sauce over the dough, leaving a 1/2 inch border at the edge. Sprinkle mozzarella evenly and dollop the ricotta mixture on the mozzarella. Sprinkle the bacon.
Step 7
Set skillet over high heat and cook until the outside edge is set and the pizza is slightly puffy. The bottom should be spotty brown when gently lifted with a spatula, 3 minutes.
Step 8
Transfer pizza to oven and bake until crust is brown and cheese is golden in spots, 7-10 minutes. Remove from oven and slide pizza onto cutting board. Let cool for 5 minutes before slicing. Sprinkle with scallion and serve.
