Ingredients

2 Tbspolive oil
or avocado
1onion
diced, white, yellow, or red
1green bell pepper
diced
2 Tbspgarlic
minced
2 lblean ground turkey
2 cupschicken stock
28 ozcanned diced tomatoes
I prefer fire-roasted
4 x 0.5 ozcanned chopped green chiles
6 oztomato paste
3 Tbspchili powder
1 Tbspdried oregano
2 tsponion powder
1 ½ tsppaprika
1 ½ tspcumin
1 ½ tspsalt
1 tsppepper
Instructions
Step 1
Add oil to a large soup pot and heat to medium-high heat. Once hot, add onions and bell pepper. Sauté until onion is translucent, approximately 3 minutes. Add minced garlic and sauté until golden, about 1 minute.
Step 2
Add the ground turkey, using your spatula to crumble it. Sauté the meat, stirring occasionally, until no longer pink.
Step 3
Add in all other ingredients. Stir to combine. Simmer for 15 to 20 minutes. Taste and add extra salt or seasonings if desired
