Marinated Tomato + Grilled Halloumi Sandwich

The perfect way to enjoy all those gorgeous tomatoes this summer. Marinate them in an oregano and shallot spiked vinaigrette and then pile them high onto a toasted baguette with plenty of grilled halloumi cheese and a drizzle of hot honey!

Ingredients

For the marinated tomatoes
3heirloom tomatoes
or beef tomatoes, sliced into rounds
⅓ cupextra virgin olive oil
15mlred wine vinegar
3gDijon mustard
3mlhoney
½ teaspoonflaky sea salt
more to taste
⅛ teaspoonpepper
freshly cracked
1gdried oregano
1shallot
large, finely diced
1 clovegarlic
minced finely

For the marinated tomatoes
Step 1
Slice all of the tomatoes into rounds and give them a good sprinkle of flaky sea salt and pepper.
Step 2
In a large bowl, whisk all of the ingredients for the vinaigrette (including the shallot and garlic) together until evenly combined. Adjust seasoning to your liking - more salt, more honey, a little more vinegar if you wish. Add all of the sliced tomatoes into the bowl to marinate in the dressing while you prep the halloumi and toast. They will release their juices which adds to the flavour of the dressing.
Grill the halloumi

Slice the block of halloumi into about six or seven pieces.
Step 4
Heat up a medium sized frying pan to medium high heat and drizzle in a little bit of olive oil. Once the oil is sizzling, turn down heat to medium and add the slices of halloumi cheese into the frying pan. Let them cook, undisturbed until the first side is a nice golden brown. Flip over each slice and cook to golden on the other side.
Step 5
You can toast up your baguette or a large slice of toast (if you'd like to have the sandwich open faced) while the halloumi is finishing up.
To assemble

Add some of the vinaigrette onto both sides of the toasted baguette. Pile up a ton of the marinated tomato slices onto one side of the bread, and then add half of the halloumi slices onto the other side. Repeat with the second sandwich.
Step 7
If you like sweet and salt, I recommend a little drizzle of hot honey or normal honey over the cheese and tomatoes. It really takes this sandwich to the next level. If that's not your thing, then feel free to omit, of course!
