Balsamic chicken traybake

This is delicious! And so simple. Throw in whatever veg you like and simply roast for 30 minutes.

Instructions

Step 1
Put the oven on to a 180C fan to warm up.
Step 2
Pat chicken breasts dry and season with garlic salt and pepper by rubbing in – set aside. Whisk together the balsamic, honey, chilli flakes and a little salt and pepper.
Step 3
Peel and chop carrots into reasonably small chunks. Peel and dice the sweet potatoes - small enough so they will cook through in the roasting time -and cut the red onion into quarters. Throw them into a large roasting dish, drizzle in olive oil and season well. Put the tray in the oven to roast for 10 minutes.
Step 4
Cut the chicken into chunks or strips. After 10 mins of cooking, take the roasting dish out and place the chicken on top of the veggies. Pour over half of the balsamic mix.
Step 5
Place in the oven for 20 mins. Meanwhile trim your broccoli or asparagus and chop your sundried tomatoes. Roll the broccoli or asparagus sears in a little olive oil and season well.
Step 6
After 20 minutes of cooking time, throw in the sundried toms and place the spears on top. Drizzle with a little more balsamic mix and pop back into the oven for 10 minutes.
Step 7
Serve up!
