The cake serves as a wonderful centrepiece for any event or gathering and is a creative way to use ripe bananas. Instructions
Step 1
Preheat the oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
Step 2
In a small saucepan, melt 1/4 cup of butter over medium heat. Add the brown sugar and stir until the sugar is completely dissolved and the mixture is bubbly. Pour this into the prepared cake pan.
Step 3
Peel the bananas and cut them in half lengthwise. Arrange the halves with the cut side down over the sugar mixture in the cake pan.
Step 4
In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.
Step 5
In another bowl, cream the remaining 1/4 cup of butter with the granulated sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract.
Step 6
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix just until the batter is smooth.
Step 7
Carefully pour the batter over the bananas in the cake pan, smoothing the top with a spatula.
Step 8
Bake for 50-60 minutes, or until a toothpick inserted in the center of the cake comes out clean.
Step 9
Allow the cake to cool in the pan for about 10 minutes, then invert it onto a serving plate. Be cautious as the sugar mixture can be hot.
Step 10
Serve warm or at room temperature.
