8Tortillas
Soft, or Mini Wraps
1onion

1 tspGinger Purée
1 tspgaram masala powder
1 tspturmeric powder
1 tspkasoori methi
1 tspFennel Seeds
Slightly ground
1 tspsalt
1 tsppepper

2 Tbspgreek yoghurt
1 tspmint sauce
1 tspsoft brown sugar
2 tsplemon juice

Instructions
Step 1
Add the onions, garlic purée, garam masala, turmeric, Kasoori Methi, fennel seed that have been slightly crushed in a pestle and mortar, salt and pepper, coriander and the juice of half a lemon to a bowl and mix.
Step 2
Add the minced lamb into the bowl by sprinkling it in. Once all the mince has been added using a gloved hand mix and squeeze everything together, keep squeezing and mixing the ingredients for at least 5 minutes, cover and place in a fridge for at least 20mins best overnight.
Step 3
Add all the sauce ingredients to a bowl or jar and mix, cover and place into the fridge.
Step 4
Place a tortilla onto a flat surface. Rub a little vegetable oil onto your hands and rub them together, this will stop the kofta from sticking to your hands. Divide the kofta meat into 8 equal balls.
Step 5
Place one of the portions in the centre of the tortilla.
Step 6
Now spread out the meat like a smashed burger covering the tortilla. Repeat with the rest of the tortillas.
Step 7
Heat a large pan and add a little oil. Once the pan is hot, add in a kofta-covered tortilla, meat side down and cook for around 3 minutes while pressing down on the tortilla, this will ensure the meat stays close to the edge of the tortilla as it will shrink. Once the meat has caramelised flip over and cook on the other side for around a minute. Once cooked remove from the pan and rest and drain on kitchen paper.
Step 8
Repeat with the other tortillas.
Step 9
Time to rack up, add some mint sauce to the tortilla, and now load one side of the tortilla some shredded lettuce, red onion slices and tomato. Fold the tortilla in half trapping the salad inside and place it into a taco holder or on a plate and top with a little more sauce repeat with the rest of the tacos, serve up, lick you’re lips and enjoy.
