Instructions
Step 1
In a large skillet heat the olive oil over medium high heat. Add the kielbasa a d brown on both sides , about 4 minutes. Remove to a plate.
Step 2
Add in the onion and pepper and sautée 3-4 minutes. Add in the garlic, salt and pepper and cook 1 minute.
Step 3
Add in the chicken broth. Scrape the brown bits off the bottom of the pan with a wooden spoon. Pour over the rice, mix and let it come to a boil.
Step 4
Reduce to a low simmer, cover and cook 15 minutes.
Step 5
Uncover, add in the broccoli (don’t stir). Recover and cook another 5-7 minutes until rice and broccoli are tender.
Step 6
Add the kielbasa back in, stir to combine. Top with the cheddar cheese. Cover and cook 2 minutes until the cheese is melted.
