Ingredients

250glamb mince
0.5onion
finely chopped
2garlic cloves

¼ cupgreen capsicums
finely chopped
¼ cupred bell pepper
2 teaspoontomato paste
200gchopped tomatoes
fresh parsley

Mini brioche buns
1 teaspoonsalt
or to taste
½ teaspooncumin powder
½ teaspoonpaprika
¼ teaspoonsmoked paprika
¼ teaspoonblack pepper
½ teaspooncayenne chilli pepper
½ teaspoonred chilli flakes
½ teaspoonmixed italian herbs
Instructions
Step 1
Take a brioche bun and create a hollow space for the filling by cutting out a portion from the top and pressing down with the back of a knife on a stable surface.
Step 2
Heat a pan and add oil.
Step 3
Once the oil is hot, add the finely chopped onions and sauté over medium heat until they become translucent.
Step 4
Add the minced garlic to the pan and continue cooking until the onions and garlic turn golden.
Step 5
Add the minced lamb to the pan and brown it, breaking it up with a spatula or spoon.
Step 6
Once the mince is browned, add the diced capsicums to the pan and cook for two minutes.
Step 7
Sprinkle the spices and herbs over the mixture and stir well. Reduce the heat to low and cook for about a minute to let the flavours meld.
Step 8
Add the tomato paste and chopped tomatoes to the pan. Mix everything together until well combined. Cover the pan with a lid and let it simmer over low to medium heat for approximately 5 minutes.
Step 9
Taste the Bolognese and add salt if needed, adjusting to your preference.
Step 10
Finish off the dish by adding freshly chopped parsley, mixing it into the Bolognese.

Preheat the oven.
Step 12
Line a baking tray with parchment paper and place the hollowed brioche buns on it.

Fill each bun with the Bolognese filling, making sure to leave some space at the top for the cheese.
Step 14
Pack the filling tightly into the buns and generously top them with grated cheese, ensuring they are well-covered.
Step 15
Place the tray with the filled buns into the preheated oven at 180°C (350°F) for about 5 minutes or until the cheese has melted and turned golden.
Step 16
Once out of the oven, garnish the buns with fresh parsley.

Serve the delicious Bolognese-filled brioche buns and enjoy!
