Instructions

Step 1
1. Preheat oven to 425. Line a baking sheet with parchment paper. 2. Wash and dry produce. 3. Chop zucchini, mushrooms, and onion. 4. Toss zucchini with a drizzle of olive oil, Italian seasoning, oregano, salt & pepper. Bake for 15 minutes or until softened. 5. Heat olive oil in a large sautรฉ pan. Add garlic and stir until fragrant (about 30 seconds). Be careful not to burn the garlic! 6. Add chopped onion and cook until softened. Then add spicy Italian chicken sausage until cooked through. 7. Meanwhile, bring a pot of water to a boil and cook pasta to al dente. Strain pasta but save 1/2 cup of pasta water. 8. Add chopped mushrooms and cooked zucchini to sausage mix. Mix in marinara sauce and as much pasta water as needed to make your perfect consistency (your preference)! 9. Lastly, add cooked pasta, salt & pepper. Plate and top with some finely shredded parmesan cheese. Enjoy!
