This easy vegan recipe is nothing too fancy, just need some tofu, rice flour, chickpea flour, sweet potato and soy milk and your pretty much on your way! Both rice flour and chickpea flour (also known as besan) can be found at all supermarkets - they are also budget friendly. The black salt (also known as kala namak) can be found in Indian grocers. It gives an eggy sulphuric taste.

Instructions

Step 1
Add all the egg white ingredients to a blender, start off with 1 tbsp of soy milk and blend. Add a little more soy milk until you have the consistency of a runny yogurt (refer to consistency in the video) then leave aside

Add all the yolk ingredients and blend, you want the consistency thick - add more chickpea flour to thicken if needed
Step 3
Bring a non stick pan to low/medium heat with some vegan butter or olive oil - you don’t want it too hot or the egg white will splatter everywhere
Step 4
Pour about 1/4 of a cup or the egg whites into the pan and then 1 tbsp of the yolk into the middle.
Step 5
Cover with a lid and let it fry for 2 - 4 minutes
Step 6
Serve with toast and enjoy!
