Labneh and Za’atar Scrambled Egg Sandwich

It doesn’t get any easier than this sandwich and it has all my favourite flavours. Use whatever bread or toast you like but I had this fresh Samoon bread that I wanted to use. I used fresh farm eggs and milk from @millerfamilyfarms to make the scrambled eggs. Season it how you like but I love using za’atar for simple sandwiches like this.

Instructions
Step 1
Toast your bread of choice, with a small drizzle of olive oil on both sides until lightly toasted.
Step 2
To make the scrambled eggs, in a pan on medium low heat drizzle olive oil. Whisk eggs and milk with salt and pepper to taste.
Keep an eye on the eggs as they cook really fast.
Step 3
To make the sandwich, smear Labneh on both sides of the toast. Sprinkle zaatar on top of the Labneh. Scoop the eggs onto the bread.
Step 4
Add vegetables of choice I used tomatoes and cucumber.
Step 5
Add one last drizzle of olive oil on the inside and close up the sandwich.
