Step 1
Cook pasta as usual -- drain and set aside in a large bowl.
Step 2
In a large skillet, heat the oil. Add chopped onion and salt well. Stir occasionally over medium-high heat until onions are golden brown.
Step 3
Add zucchini and stir until finely coated in oil. Once the edges start to brown, add marinara and tomatoes. Mix carefully until evenly heated.
Step 4
Add zucchini mixture to cooked pasta and fold together gently. Serve hot, with optional parmesan cheese on top.
