Instructions
Step 1
Prepare vegetables. Chop one whole onion. Wash, de-seed, and cut two bell peppers into strips. Peel 3-4 cloves of garlic and smash flat with knife.
Step 2
Cut chicken thighs into smaller pieces. Remove excessive fat.
Step 3
Season chicken with salt, pepper, and cumin.
Step 4
Heat a moderate amount of olive oil in pot over medium-high heat. Add chicken. Cook until browned on both sides.
Step 5
Once browned, add sliced sausage briefly to cook. Remove protein from heat and set aside.
Step 6
Scrape any browned bits from bottom of pot and remove to prevent excess burning later in the cooking process. Add a little bit more olive oil to pot.
Step 7
Cook onions and bell peppers until onions are translucent, 2-3 minutes. Add smashed garlic for 1-2 minutes afterwards.
Step 8
Add chicken broth, beer, and diced tomatoes.
Step 9
Add bay leaves, and all listed spices. Bring pot to a boil and allow to simmer for 3-5 minutes.
Step 10
Add in rice and bring to boil again. Allow some of the liquid to soak up and the rice to start cooking. Once complete, turn heat to low and allow dish to simmer while the rice cooks. Cover and cook for approximately 25 minutes. Stir every so often.
Step 11
Once your 25 minute timer is complete, add you manzanilla olives and allow to cook for five more minutes. Check softness of rice and adjust spicing as needed. Enjoy!
