Cajun Chicken Drumsticks

Instructions

Step 1
1. Take your desired number of drumsticks and clean them and remove the scales.
Step 2
2. Season the drumsticks liberally with a Cajun spice or salt, pepper, paprika, onion powder, and garlic powder. Do no hesitate to season liberally.
Step 3
3. Cook the drumsticks in a cast iron skillet for a few minutes on each side in hot vegetable oil. Remove the chicken and place on the side.
Step 4
4. In the same skillet cook about 1/4 of a sweet onion until translucent. Add 3 cloves of minced garlic and if you desire broccoli or similar vegetable. Do not cook long enough that the garlic burns.
Step 5
5. Now add 2 cups of rice directly to the skillet. Let the rice roast for a few minutes in the onion, garlic, and vegetable. After a few minutes add equal parts water to the skillet (cups of rice=cups of water) and reseason the mixture with the same seasonings as the chicken drumsticks. Again feel free to be liberal and make a nice top layer over the water before stirring. Add 2 chicken bouillon cubes and let them dissolve. Once they have dissolved remove from heat and add the drumsticks to the "stew" and make sure they are fully submerged or as close as possible.
Step 6
6. Cover the skillet with foil and place in a 400 degree oven for 30 minutes.
Step 7
7. Remove from oven, uncover it and replace in the oven for 15 more minutes. You can also check to make sure top isn't burning and the middle is properly cooked. Remove from the oven and garish with fresh parsley.
Step 8
Note: if you wish to make this a truly Cajun dish then complete the holy trinity with bell pepper and celery in addition to the onion (no broccoli).
