Instructions

Step 1
Fry up your red pepper with the olive oil in a frying pan

Whisk the eggs in a seperate bowl and then pour into the pan, mixing as it cooks

I add fajita spice mix here to jazz it up!

Add your handful of spinach and mix in

Toast your pitta bread and serve with the eggs, chuck the cottage cheese on top with some sweet chilli sauce and sliced gherkins
