Step 1
1. Preheat oven to 230 degrees Celsius or 210 fan forced. Place milk & eggs in large bowl. Whisk until well combined. Stand for 15 mins.
2. Meanwhile, place oil in a 5cm deep, 16x22 metal roasting pan. Place in oven for 5 mins or until oil is sizzling.
3. Add flour to egg mixture. Whisk until well combined. Carefully pour batter into sizzling pan.
4. Working quickly, arrange onion, zucchini & tomato wedges. Return to oven immediately. Roast for 15 mins or until veg is tender & batter is golden & puffed. Add mini Roma tomatoes & cook for a further 5 mins or until tomatoes begin to blister. Sprinkle with basil. Cut into pieces. Serve.
