Step 1
Mix the yeast, sugar, and warm water. let it sit for 10 minutes. Once yeast has risen add the eggs. then add hot water, sugar, salt, and oil. add 5 pounds of flour. Mix with hands and knead. cover the dough and let it rise for 1 hr punch it down then let it rise for another 2 hours. Braid challahs and let them rise for another hour. brush with egg and add topping of your choice (sesame, everything but the bagel, crumb, pastrami, etc.) bake 350 for 45 minutes or until golden brown.
