Instructions
Step 1
Preheat oven at 180 C
Step 2
In a frying pan, melt coconut oil, add the shallots, garlic. Sweat until shallots are translucent but not coloured
Step 3
Add leeks, mix with the shallots and cook for few minutes
Step 4
Add frozen spinach and cook for few minutes on a medium to low heat
Step 5
With a knife, open the top of the peppers and remove all seeds and as much of the white parts as possible
Step 6
In a large bowl, add all ingredients and seasoning together, including the leeks and spinach. Mix well
Step 7
Fill in all peppers, place on a baking tray, standing, and bake in the oven for 30 minutes
Step 8
Serve immediately with pakchoi or side salad
