Easy Braised Chicken & Rice

Instructions
Step 1
Put the chicken thighs into a bowl, add the lemon juice, 1/2 tsp 7 spices, 1/2 tsp cinnamon powder and salt, stir well to coat, set aside.
Step 2
Rinse the rice several times in cold water, until the water runs clear.
Step 3
Heat 1 tbsp oil in a large ovenproof saucepan over a medium high heat on the stove, add the chicken thighs and cook each side for 5-7 minutes or until browned on each side, remove the chicken from the saucepan and set aside. (The chicken doesn't need to be fully cooked yet).
Step 4
In the same saucepan heat another tbsp of oil in a large ovenproof saucepan over a medium low heat, add the onion, cover and cook for 5 minutes until softened, add the garlic and ginger & cook until fragrant about a minute.
Step 5
Stir in the rice along with the chicken stock, the rest of the spices, bay leaves, cardamom & cook for a minute, carefully add the chicken back into the saucepan, (keep chicken skin side up), taste, adjust the salt, cover with a lid and simmer for 20 minutes until the liquid is almost absorbed.
Step 6
Optional Step: Preheat the broiler, remove the lid from the saucepan and broil until the chicken skin is crispy and golden, 2 to 3 minutes.
Step 7
Garnish with chopped parsley then serve immediately.
