.Turkish cuisine is famous for its kebab varieties. This particular juicy and tender kebab is named after the city of Adana in Turkey.
Made with lamb mince seasoned with parsley, pepper, onion, garlic, jalapeños, and a bunch of exciting spices, grilled to perfection on large skewers.
Grilled kebabs are often served over Lavash flatbread to catch the drippings and some fresh salad. Enjoy!!

Instructions
Step 1
In a food processor add meat & fat. Fill the processor about half full and grind in batches pulse for one second eight to ten times and check the consistency after each pulse. Do not over-process the meat — aim for finely mince the meat, not paste.
Step 2
Alternatively, use mincer and mince the meat & fat twice.
Step 3
In a bowl, add the mince along with salt, black pepper, sumac, cumin powder, coriander powder, paprika, & chilli powder. Mix everything together and set aside.
Step 4
In a chopper add the sliced bell pepper, onions, jalapeños and garlic , grind the mixture coarsely and remove its excess moisture by putting in a muslin cloth. Add in a mince.
Step 5
Finely chopped the parsley (alternatively you can use coriander), make sure there is no excess moisture in herbs and add in.
Step 6
Mix with hands for good 2-3 minutes until everything well combined.
Step 7
Cover and leave in refrigerator for 3-4 hours ideally but atleast 30 minutes.
Step 8
Put the kebab meat on to the skewers. (You can use water to prevent the kebab meat to stick on your hand while putting the meat on to the skewers.)
Step 9
Put the skewers on a charcoal grill and cook around 15-20 minutes. Alternatively use oven at 180 c or cook on stove over skillet. While grilling, don’t forget to flip the each side of the Kebab continuously to keep the ingredients juice in the meat.
Step 10
Don’t over cook the kebabs as these will become hardened.
Step 11
Serve with Lavash bread, tzatziki sauce and fresh salad.
